Rice and Bean Tostadas Recipe

Tonight we had bean and rice tostadas for dinner for our meatless Monday challenge. I have noticed a trend that we are eating a lot of Mexican food and pasta on meatless Monday. I think I need to branch out for next week. This meal was super easy and fast! This made it a 7 out of 10 meal just to start.
So the verdict from the family was.........

Delicious! Or as my 3 year old said "Do I like it??? Mmmmm it's delicious!" That's her new saying now, asking us if she likes something before she renders a verdict. This dinner took me 20 minutes from start to finish and it was so so so yummy! I'm going to give it a 10. We will be having this again soon.

1-1/2 cups water
1-1/2 cups quick cooking brown rice
1 15oz can chili beans
1/2 cup chopped onion
1 cup frozen corn
8 tostada shells
3 cups shredded lettuce
1/2 cup shredded cheese
1 cup diced tomatoes
Cilantro and Salsa to top (optional)

1. Pre-heat oven to 350 degrees
2. In a large sauce pan, bring the water to a boil. Stir in rice and onion return to boil and then reduce heat to med. Cover and simmer 5 minutes. Remove from heat and stir. Keep covered 5 minutes. Stir in drained chili beans and corn. Heat through.
3. Meanwhile, place tostada shells on a baking sheet and bake for 5 minutes.
To assemble top tostada shells with lettuce, bean and rice mixture, cheese and cilantro and salsa. Makes 4 servings.

I added some cayenne pepper, chili powder, and cumin to the rice and onions as it was cooking. Sorry, I didn't measure so use your best judgement.
