Meatless Monday

In honor of heart health awareness month, my family is going meatless on Monday. We've committed ourselves to this project for the next six months. I know this sounds like a long commitment, but we figure after six months it will become a lifelong habit and hopefully we will not go back.

Before this lifestyle challenge, I only had 6 vegetarian recipes in my recipe box. Now I'm looking for recipes to add to those six. I would like to try something new for a while to add some fun to our night. Tonight I'm making pasta with roasted cauliflower & red onions for the first time. It sounds really yummy and my kids all eat cauliflower so this should be a hit.

I would love it if you would send me any vegetarian recipes that you have tried and love. I'm on a mission to lower my family's risk of heart disease. Depending on the website you visit going meatless once a week will lower your risk anywhere from 19% to 26%. Are any of my followers willing to join me in this challenge for at least a month??? Come on now, if this meat loving family can do it you can too!

  2. I have been a vegetarian for about 19 years....I just leave the meat out of most common dishes.

    Taco Salads with beans instead of meat
    Spaghetti with no meat
    Rice with Tofu instead of Chicken
    Breakfasts with eggs and no bacon
    Meatless lasanga
    It's easy to just leave the meat out and you don't necessarily have to come up with a special vegetarian meal! :)
