Before this lifestyle challenge, I only had 6 vegetarian recipes in my recipe box. Now I'm looking for recipes to add to those six. I would like to try something new for a while to add some fun to our night. Tonight I'm making pasta with roasted cauliflower & red onions for the first time. It sounds really yummy and my kids all eat cauliflower so this should be a hit.
