Vegetarian Stuffed Pepper-Meatless Monday Recipe

Tonight's dinner, Vegetarian Stuffed Peppers are in the Crock-Pot as I type. Now if you've been reading for awhile, you already know how much I love my Crock-Pot. I just love to cook with it! It makes dinner time oh so easy. I would love to know why my kids morph into needy children the second I start cooking. On the nights when my dinner is prepped in minutes and cooked without any effort from me is almost like having a personal chef. Almost!

This is one of the few dishes in my house that my kids all eat. Does anyone else have a hard time getting their kids to like the same foods? Now combine the fact that all three kids like this meal and the fact that it takes me just a few minutes to prep and you can see why I make it so often. If you double the recipe, it makes great lunch leftovers!

Vegetarian Stuffed Peppers Recipe

Ingredients
4 bell peppers (I use red)
1 can black beans rinsed and drained
1 cup shredded cheese (pepper jack or sharp cheddar are my faves)
3/4 cup salsa
1/2 cup frozen corn
1/2 cup green onions
1/3 cup uncooked rice
1 t chili powder
1/2 t cumin

1. Cut the tops off the bell peppers and remove seeds and membrane. This can be tricky so go slowly or your pepper will break.
2. Combine remaining ingredients in a large bowl and spoon into the bell peppers.
3. Place bell peppers in the Crock-Pot and cook on low for 6 hours.

I like to add a little more salsa after it's done since I love spicy food! Here is a picture of my dinner cooking. Mmmmm, I can't wait until 6pm!

  5. Black beans, corn and scallions means success. I have been using more and more Black Beans recently so this is just right for me.
