Meatless Monday-Veggie Tacos

I have to say that I have had a lot of fun finding vegetarian recipes for my meatless Monday challenge. And for this week's meal I was a little unsure of how it would turn out. But I can honestly say that they were wonderful! And Brett who said that they sounded good when I showed him the recipe, later told me that he thought they wouldn't be very good and he loved them. So much for trusting him on his opinion from here on out.

Veggie Tacos
2 small zucchini chopped
1/2 red bell pepper chopped
1 cup frozen corn
2 cups chopped spinach
4 scallions chopped
3/4 cup shredded cheese (your choice I used cheddar)
1 can beans rinsed and drained (your choice I used pinto)
2 t chili powder
1 t cumin
1/4 t dried oregano
1/8 t salt
1/4 t pepper
salsa to top
1 pkg taco shells

1. Heat oil in a large skillet on med/high heat. Add zucchini, scallions, bell peppers, and corn. Cook 5 mins. stirring occasionally
2. Stir in seasonings, cook 1 min
3. Stir in beans and cook 3 minutes. Meanwhile cook taco shells according to package directions.
4. Assemble taco-veggie mixture, spinach, cheese, salsa

Now tacos don't exactly make the best pictures, so I took a picture of the fixings. The babies loved the tacos, but Isabella wasn't a huge fan. She ate a couple bites of the taco and then ate the shell, cheese, and spinach. Little stinker!!! Also, I have never made a recipe without modifying it so you can find the original recipe here

  1. My daughter would have loved those! Hubby isn't big on veggies... in fact, he'll only eat corn and potatoes. So we don't do vegetarian around here very much at all!
