Spaghetti with Roasted Zucchini - An Awesome Dinner

So Brett and I made a pact to eat vegetarian one day a week back in February. It's pretty much habit that we eat meatless twice a week now. I've found a few good recipes along the way and it's a whole lot cheaper and healthier to eat vegetarian. Last night we tried a new recipe and let me tell you, it's a keeper!

Spaghetti with Roasted Zucchini

8 oz spaghetti
4 TB olive oil
1/2 cup panko bread crumbs
3 small zucchini  sliced 1/4" thin
1/8 of a large onion chopped
1/2 t red pepper flakes
1/4 cup grated parmesan cheese
3 cloves garlic-grated (my tip to you, it's much easier to grate garlic than chop it fine)

1. Heat oven to 425
2. Cook pasta according to package directions
3. Combine zucchini, onion, red pepper flakes, bread crumbs, and 2TB olive oil in a bowl. Pour onto a baking sheet. Season with salt and pepper to taste and top with parmesan cheese. Bake 10 mins. (I like my veggies crunchy so you may need a little more time)
4. Drain pasta and place in the mixing bowl you used for the zucchini mixture. Toss with 2 TB of olive oil. Add zucchini mixture and toss.

The kids and Brett and I loved it!!! And the best part? It maybe cost $3 to make. What a great bonus because it really was great. And I really just can't resist taking pictures of my kids eating pasta. I think it's the cutest thing watching them slurp up the pasta.

If you don't like zucchini, you could substitute it for just about any veggie. I highly recommend you try this recipe. It really is delicious!


  1. I love zucchini and this dish looks yummy! My boys are always double fisting. I think in our case it is a "I gotta get it before my brother does" mentality even though they cant reach each others highchairs.
