BLT Pasta

Everything tastes better with bacon, right? I wold love to find the person that doesn't eat bacon because they think it tastes gross. I get that there are people who don't eat it for health, vegetarian diet, or religious reasons. But to not eat it because you think it tastes bad? Insane! (This is what 99% of people think of me for not liking chocolate so I want to meet the bacon person)

So I decided to make BLT pasta. I saw a recipe in a magazine that got me thinking. And since I can't follow a recipe to save my life, I didn't even keep it and I just made up my own.

BLT Pasta

1 pound bacon
4 Roma tomatoes diced (next time I'd use 5, I love tomatoes)
3 romaine lettuce leaves (but really any lettuce would work, I just had romaine)
10 oz pasta
Olive Oil to taste (optional)
Parmesan cheese (optional)

1. Bring pot of water to boil and cook pasta according to package directions and drain.
2. Meanwhile brown bacon to your preference in a large skillet.
3. After the bacon is cooked remove to a plate with paper towels to absorb the grease. (I think this makes it healthy)
4. Drain bacon grease from the skillet but leaving 1 T of grease in the skillet.
5. Cook tomatoes in the remaining bacon grease. 3-5 minutes

6. Tear the lettuce and chop the bacon into bite sized pieces.

7. Add drained pasta to the pan. Add the bacon and toss. I thought it was a little dry and I didn't want to add more bacon grease to the pasta so I added some olive oil. You could also use some pasta water or bacon grease.
8. Pour into a serving bowl. Put the lettuce in a separate bowl.
9. Add lettuce once the pasta is served. Top with Parmesan cheese if desired.

The Verdict?

It was pretty darn good! I want to make it again before summer ends. It's defiantly something that you want to eat when it's hot out. You could cook the bacon ahead of time and just warm everything up when you go to make dinner. But we almost never have bacon for breakfast so I don't see that happening here. Also, make only what you are going to eat that night. The leftovers are gross. I tried it cold (yuck) and then I heated it up and it was edible, but nothing I would choose to eat. Next time I'll go with 8 oz of pasta to feed my family of 5.
