Creole Shrimp and Rice

I normally post recipes that are kid approved, but sometimes you just need to eat without your kids. (That's known as every Friday night in my house) So I thought I would share a recipe that is perfect for a quick and easy date night meal.

Creole Shrimp and Rice
serves 2
2 TB olive oil
1/2# shrimp
2 t poultry magic (or creole seasonings of your choice)
1 red bell pepper
1/4 onion (I use sweet onions)
2 ribs celery (optional as in throw it in if you have some on hand, but don't buy it just for this dish)
1 can Rotel
1 cup uncooked brown rice
3 cloves garlic

1. Chop onion and bell pepper into small pieces. Finely chop the garlic


2. Cook rice according to package directions.
3. Meanwhile heat 1T of oil in a med sized skillet. Saute onions and garlic for 2 minutes.
4. Add shrimp and 1/2 t of poultry magic and saute until just about done and remove to a plate. (I take it out about 30 seconds before it's done)

5. Add 1T olive oil to the same skillet. Saute red bell peppers, celery, and remaining poultry magic for 3-5 minutes. I like my peppers a little crunchy so I do 3 minutes.

Can you tell that this spoon has a smaller taster spoon on the other end?
My Aunt bought me this and I love it!

6. Add Rotel to veggies and cook 5 minutes.


7. Stir in shrimp and heat.


8. Put half the rice on a plate and top with half the shrimp mixture, repeat.

Mmmmm doesn't it look so yummy?


I am trying to eat healthier so I used brown rice last night. But, I like it better with white rice since it absorbs the juice better. From start to finish this meal took 25 minutes to make. It was so delicious and a perfect meal for Brett and I to share after the kids went to bed. We did say that the kids would eat it if we added sausage for them instead of shrimp in case you want to make it a family affair.
