Marinara Veggie Pasta

It's a joke around my house that the kids will starve if something ever happens to me. It's not that Brett can't cook, he just has no desire to learn or to cook at all. But back in the day when he was courting me, he cooked once or twice a year. This recipe is one that he invented and it is so good, that I make it from time to time.

Marinara Veggie Pasta

1 pound of pasta
1 jar marinara sauce (or spaghetti sauce)
3 cloves minced garlic
1/4 t red pepper flakes
2 T olive oil
Parmesan cheese

Your choice of the following veggies
bell pepper

1. Chop your veggies into bite sized pieces. I used one zucchini, one yellow squash, one red bell pepper, 1/4 onion

2. Heat olive oil and saute onions and garlic in a large skillet.

3. Add sauce and red pepper flakes.

4. Add the remaining veggies and simmer for 30 minutes or until soft.

5. Meanwhile cook pasta according to package directions. Drain and pour into a large bowl. Top with veggies mixture and serve with Parmesan cheese.

Super easy and delicious meal that is ready in 45 minutes! Not too shabby from a man that hates to cook! And it's kid approved too!
