Southwest Chicken Skillet Recipe & Giveaway

Lawry's Seasoned Salt and Seasoning Mixes

I have a super easy recipe that anyone can make. I mean it, even those of you who say you cannot cook, you can make this recipe in less than 30 minutes. You have to love that right? Lawry's sent me some seasoning packets since I am a BuzzAgent so I could try out some new recipes.

1 T olive oil
1 chicken breast cut into bite sized pieces
1 package Lawry's Southwest Chicken Skillet Spices & Seasoning Mix
1 cup black beans cooked
1 1/2 cups frozen corn
2 small tomatoes diced with the juice
1 green chile diced
1/2 cup instant brown rice
1/2 cup water
1/4 onion diced
1 cup pepper jack cheese
Fresh cilantro-to taste

1. Heat oil in a large nonstick skillet.
2. Add onions and chicken and brown.

3. Drain any grease and stir in Seasoning Mix, beans, rice, tomatoes, corn, and water. Bring to a boil and reduce heat to medium.

4. Cover and simmer 10 minutes or until rice is tender and chicken is cooked through.

5. Remove from heat and sprinkle on cheese.

6. Cover for 3 mintues until the cheese is melted.

7. Serve toped with fresh cilantro.

This picture didn't come out well but I wanted to include the final product.

Brett and I loved this meal! It was so tasty and we both think it would be perfect as a burrito with some shredded lettuce. The chicken mixture tastes like something that you could get at Qdoba or Chipotle. I was surprised at how much we liked it. Brett had thirds which made lunch leftovers impossible.

Update-I made them again and put the mixture in a large flour tortilla. It was awesome and it really did taste like a burrito that you could get at Chipolte or Qdoba. These burritos are a favorite now.
