Pepper Bean Taco Recipe-Delicious and EASY!

I have another quick and easy vegetarian meal that my family loved to share with you. From start to finish this meal too me 20 minutes to make. Getting a meal on the table in 20 minutes starts the night off in the win category for me. But having all three of my kids eat it makes it a grand slam.

Veggie Bean Tacos

2 T olive oil
2 bell pepper (I used red)
1/4 onion
2 cloves garlic
1/4 t cumin
1/4 t pepper
1 15oz chili beans drained not rinsed
Package of hard taco shells
4 oz jack cheese
bunch of spinach
salsa

1. Chop onions and mince garlic.
2. Heat olive oil in a large skillet and saute onions and garlic.


3. Meanwhile-cut bell peppers into strips.
4. Add bell peppers, cumin, and pepper to skillet and cook 10 minutes.


5. Chop spinach into small pieces.
6. Stir in beans and heat.


7. Assemble tacos-bean mixture, spinach, cheese, salsa.






And since my kids are not advanced in their eating skills, they cannot pick up a taco. So I use the same ingredients and make them nachos. I break apart the taco shells into chips and then top them with the bean mixture, cheese, and salsa. 


We loved this dinner! You definitely need to try it out for yourself. And it's pretty healthy way to eat Mexican food which can be difficult to do.

  4. A 20 minute meal? I am totally down with that. These look so good! And even though I do have advanced eating skills (well, I hope!), sometimes I break my tacos into nachos too. :)
