Baby Shower Food Recipes

My friend Holly and I threw a baby shower this weekend. Since I'm more of a foodie than a decorator, I did the food and she pretty much did everything else. I knew we were going to be eating sitting on couches and the floor, which screams finger foods. I went with a cupcake theme for the brunch baby shower.



Menu
Broccoli and Cheese Cupcakes
Sausage and Bell pepper Cupcakes
Pancake Cupcakes
Fruit Salad Cupcakes

Broccoli and Cheese Cupcakes Recipe

2 cups broccoli
1/2 cup minced onion
1 cup shredded cheese
1/2 cup Bisquick
1 cup milk
1/2 t salt
1/2 t pepper
2 eggs

1. Heat oven to 400 degrees. Grease a 12 count muffin pan.
2. Steam broccoli in the microwave for 2 minutes and add evenly spread in the muffin pan.
3. Mix remaining ingredients and pour evenly into the muffin pan.
4. Cook 20 minutes.

You can make any variation of this dish including using meat with this formula. 10 oz veggies, 8 oz cheese, and 1 cup meat. Keep all the remaining ingredients the same.


Mini Pancake Cupcakes 

These are very easy to make. Almost too easy considering how wonderfully delicious they are.

1. Take regular pancake mix and make it according to package directions.
2. Pour into a greased mini muffin pan and bake at 350 degrees for 10 minutes. Remove from pan and cool.
3. Mix 1/2 can (gasp I don't make my own frosting) of cream cheese frosting with about 3 T of maple syrup and frost cupcakes.
4. Top with crumbled bacon.


The shower was fun and the finger food was a hit. The pancake cupcakes were the crowd favorite and I will be making them again soon!
