Happy St. Patrick's Day

We woke up this morning to some crappy weather so we decided to skip the St. Patrick's Day parade this year. Last year we suffered through the wind and rain and the kids were miserable by our time to walk through so we knew what was in store for us. But in the interest of feeling festive here is a picture from last year.

Now that I'm a mom, St. Patrick's Day has a different meaning to me. I like to get my kids excited about holidays through food, so this morning we started out with some green waffles and green grapes. Then for lunch I made a green eggs and ham omelette's and kiwi. I would have dyed their milk green too, but since it was in straw cups and they couldn't see it, I didn't see the point.

Tonight after dinner I have a big surprise for them for dessert. I just couldn't help myself not to make these for dessert.

It was a really easy dessert to make, you just make small batches of marshmallows and dye them and add the Rice Krispies. It was a little time consuming since I had to wash the pan in between batches which is why I got lazy and skipped the yellow layer.

We haven't gone out to do anything for today, we're planning on hitting Downtown Vancouver tomorrow for some activities... strangely the parade is tomorrow.. i dunno, i think they were just run by different companies or it was a funny way to torture people with hang overs lol!
