Meatless Monday Challenge Update

Last year in February my family started Meatless Mondays in honor of heart health awareness month. I challenged my husband to stick to the challenge for 6 months. He grudgingly agreed to try it out. I think he was secretly hoping that we would quit once March hit.

My kids like to eating Vegetarian too! 

Well it is 13 months later and we now eat meatless at least twice a week. After a few weeks of trying new recipes we have found our favorites and Brett actually requests vegetarian meals. He says that he doesn't want to give up meat completely, but that he likes skipping meat a few nights a week.

We made some other changes this year as well when it comes to our eating habits. I was given the opportunity to review and giveaway Barilla's Whole Grain Pasta. I was hooked from the first bite! We have made the switch to whole grain pasta which is much healthier and I don't have to feel guilty about feeding my kids pasta as often as I do. We also switched to brown rice and wheat bread. I'd like to find a whole grain bread that actually tastes good so if you have a suggestion, I'd love to hear it.

For this year's challenge to eat healthier I'm going to try to learn how to cook quinoa and polenta. I'd like to have more vegetarian options besides lots of pasta. I would love to read some of the recipes you have for meatless nights. Or if you have any tips on cooking polenta or quinoa that you can share with me.


  1. We don't have meatless nights so I will be of no help....sorry! BUT I do want to follow your lead...hmmmmm....gotta start thinking!!


  2. I love whole wheat pasta! I know a lot of people hate it, but I feel like it's more filling and when you have sauce on it anyway, it's hard to tell the difference.

    Whatever you do with quinoa, make sure you rinse it well before you use it! I have made that mistake and it is really bitter if you don't.
