Pasta Recipe -I Need Some Name Suggestions

Have you ever cooked with Philadelphia cooking creme? I love this stuff and this is coming from a person who doesn't really like cream cheese. I created a pasta recipe using the Santa Fe flavor and it sounded so good for dinner a few weeks ago. I went to the store and bought all my groceries and I hit the dairy section last.

To my dismay I discovered that my store no longer carries the Santa Fe flavor. I had a small oh crap moment since my shopping was done and I didn't want to try to plan another meal on the spot. So I decided to create a meal on the fly and I picked up the tomato basil flavor. I headed home and warned Brett that this meal would be good or bad and that we'd see.

13oz box of whole wheat shells pasta
2 T olive oil
1/4 cup onion chopped
2 cloves garlic minced
1 small chicken breast cut into small bites
1/4 tsp. basil
1/4 tsp. oregano
2 tomatoes
1 red bell pepper
6 mushrooms
1/4 cup white cooking wine

1. Boil water and cook pasta according to package directions.
2. Meanwhile, heat the olive oil in a large pan. Add onions, garlic, and chicken. Season chicken with the oregano and basil. (I think I added some pepper too but I can't remember exactly and I didn't write it down.) Cook until chicken is almost cooked through.
3. While the chicken is cooking, dice the tomatoes, bell pepper, and slice the mushrooms.
4. Once the chicken is almost done, add in 2 tomatoes diced with the juice. Cook for a min.
4. Add bell pepper, mushrooms and cooking wine cook for 5 minutes.
5. Add cooking creme and heat. Pour over pasta and stir to combine and serve.

This was a big hit in my house! All the kids ate it after picking the chicken out first. (Sigh) I'm glad I decided to write down what I was doing for the most part so I can make it again. Oh and the best part, it took me 30 minutes to make!!! But now I need a name for this pasta. So my dear readers, do you have any brilliant suggestions for me?

  1. Looks delish! How about "Allison's Awesome Pasta?" I have a lot of pasta recipes named after people who have created them!
