Easiest Pot Roast Recipe in the World

OK I'm going to let you all in a little secret, I make the best pot roast and it only takes me a few minutes to assemble. And the best part is that it's Brett's favorite meal. I was annoyed at first that his favorite meal is one that I put zero effort into. I mean really, why can't his favorite meal be one that I slaved over for an hour? And then reality set in and I realized that I have a husband who loves the easiest meal in the world to cook, and I fell in love with him all over again.


So last night in honor of the beginning of football season and the fact that I decorated the house for fall, I made Brett's favorite meal. You would have to know Brett and I intimately to follow the dotted lines between football fall decorations and pot roast but they're there I promise. So break out your slow cooker and the four ingredients needed and after 5 minutes of prep time, you'll be done cooking.

Mexican Style Pot Roast Recipe

Ingredients
1 pot roast
1 or 2 small cans of sliced new potatoes (my kids don't eat potatoes so I use one can)
1 can Rotel
1 packet of Taco Seasoning (I buy a big can Costco so I just pour in what I think is in a packet.)





Directions
1. Place the pot roast in the crock pot.
2. With a slotted spoon remove the new potatoes from the can leaving the juice behind and put over the pot roast.
3. Dump the Rotel over the pot roast.
4. Mix the taco seasoning with the potato juice and pour over the pot roast.


5. Turn on low and cook for 9-10 hours.

Serve with whatever vegetable you feeling like having. I usually make a salad since it's easy and steam some broccoli since Isabella doesn't eat meat without protesting and I need something on the table for her to eat.

I serve it in a bowl since there is lots of yummy broth that goes with the meat.



Brett was a very happy husband last night. The twins loved it too! Mark ate three big helpings which is huge for him since he is very hit and miss with meat. And this was my non-meat eaters reaction to her daddy's favorite meal.

She ate a carrot to wash it down. Only my kid.

So there it is, the easiest and tastiest pot roast recipe in the world. It took me less than 5 minutes to assemble and I was taking pictures too! This is the prefect meal for a busy and cold fall or winter night. Just throw it in the crock pot in the morning and it's done when you get home.

  1. This looks yummy and very very easy! I grew up in northern Maine (potato country) so I never even knew that they sold potatoes in a can until I met my husband and he loves them!

  2. I didn't know there is potatoes in a can either. Question 1) is the rotel spicy with the green chilies in it? 2) do you cut that huge piece of roast in a couple of pieces or just leave it in one big lump? 3) do you season the ingredients with salt and pepper?
    I love roast and slow cook meat...can't wait to try.
