International Delight Iced Coffee Playdate

When International Delight introduced their Iced Coffee line, I was very excited! I have the typical 4pm slump that so many moms and professionals suffer from. It seems cruel to me that I get very sleepy at the same time my kids wake up from their naps. And there is no way I'm dragging three kids to a coffee shop to get a wake up perk. Which is why I love the International Delights Iced Coffee so much, it's in the fridge so I don't have to go anywhere.

I got to host a coffee date with some of my friends for national coffee day so I could share the great taste of the iced coffee with them. I'm in a MOPS group, and we had a coffee play date. I went with a cupcake theme for the food since it's easy and International Delight sent me a recipe for Mocha Chip Muffins. I had a strong feeling that my friends would like a muffin that has coffee and chocolate in it. I was right!

I bought the Original, Mocha, and Vanilla flavored Iced Coffee for everyone to try. My friends LOVED the mocha! It was by far their favorite and six women managed to drink almost the whole half gallon in a couple of hours. And while vanilla was my favorite, the Original flavor was their second choice. And I'm quoting here "I like that the original flavor does not have too strong of a coffee taste and it's creamy and delicious." The Iced Coffee by International Delight was a huge hit with everyone!
I think what everyone liked most about the International Delights Iced Coffee was that it tastes just like the coffee you get in a coffee shop without the coffee shop hassle and price tag. In fact, you can buy a half gallon for the same price as one cup of coffee at a coffee house. You have to love that! I sent everyone home with a couple of coupons to buy some coffee for themselves. 
Once we were hopped up on the caffeine, we got a little silly with the chalkboard cut outs that I was sent. All I can say is that the chalk boards are erasable and I may need an intervention one day for my overuse of them. 

The Mocha Chip Muffins were a huge hit with everyone, including the teachers at my daughter's preschool who I gave the leftover muffins to. In fact they were so good, that I thought I would share the recipe with you.

Mocha Chip Muffins Recipe
1 3/4 cup flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup sugar
1 cup semi-sweet chocolate chips
1 cup International Delight Mocha Iced Coffee
1/3 cup vegetable oil
1 tsp instant coffee
1 egg
2 tsp vanilla extract

1. Preheat the oven to 400 degrees.
2. Line a 12 cup muffin tin with paper liners.
3. Whisk the dry ingredients together in a large bowl. Stir in the chocolate chips.
4. In a separate bowl whisk the remaining ingredients stirring until the coffee is completely dissolved. Add the coffee mixture to the dry ingredients and stir until just combined.
5. Fill each muffin cup to 3/4 full.
6. Bake 18 minutes.

There are more recipes on International Delight's Facebook page. And while my store is not carrying the new flavor yet, I cannot wait to try the Caramel Macchiato Iced Coffee! I've been waiting for them to launch a caramel flavor and now they have! I don't know if it will edge out my favorite vanilla flavor, but I'm going to be a very happy girl when I see it at the store.

We had a great time at our coffee play date and I'm so glad I got the chance to share the International Delights Iced Coffee with my fellow MOPS friends.
