World Pasta Day with Barilla

I love making pasta for dinner. Why? Well that's easy, all my kids will eat pasta and it's usually a quick meal to make. I like sitting down to dinner at home because my family eats healthier and it costs so much less than eating out. So pasta is my saving grace and last year we fell in love with the whole grain pasta from Barilla. We usually eat pasta twice a week and this week I tried out a new recipe to celebrate World Pasta Day.

I made Barilla Campanelle with Three Cheese Sauce, Roasted Peppers, Olives, and Oregano. It's one of the recipes you can find in The Modern Family Pasta Cookbook. I chose this meal since I could whip it together in 20 minutes. I love having a meal that comes together quickly and incorporates veggies. We loved this meal and I think you will too!

I stared this dinner 10 minutes before our usual dinner time. I was running behind since I stopped to talk to a friend for 5 minutes and I ended up at her house for 30 minutes. I should have known that would happen, but I was scrambling to get dinner on the table anyway. I was very happy that I had a quick and easy meal plan for dinner. My kids don't handle a late dinner very well and it can make meal prep very stressful when they are asking for dinner constantly. I love that I can give my kids some attention while the noodles boil and the sauce simmers. Just a few minutes of my attention can go a long way. OK fine, I also check my email and Facebook when I'm cooking dinner. What can I say? I'd never get anything done without multi-tasking.



And after reading some facts about how so many families feel about dinnertime, it's nice to know that I'm not the only one who struggles to get dinner on the table every night. Two in five households agree that it is difficult to put a meal on the table. Their house must be like mine at meal prep time, Dad just walked into the door and the kids are asking when dinner will be ready every two seconds. Or so it seems at least. And I'm not going to lie, I also like making pasta since I can multi task while I cook. With a four year old and two year old twins, dinner prep doesn't get to have my full attention. Plus on those days when the first time I'm thinking about dinner is at 5:30, it's nice to have a quick and easy meal that I can put together with pantry staples. Also a good thing when you haven't gone to the store.
