Meal Ideas with Minute Rice

Minute Brown Rice is a pantry staple in my house since I can make a quick meal or side dish with it. My kids love rice and last year I switched my family from white rice to brown rice. It's healthier and I love the nutty flavor. One of my favorite go to vegetarian meals is Rice and Bean tostadas which I make with the Minute Brown Rice. I love it since all my kids will eat the tostadas and I can get dinner on the table in 20 minutes. Trust me, it would take longer to load my kids in the car and get food from a drive thru, not to mention healthier.


Another go to meal that I make for dinner often, but I sometimes make it for myself for lunch is veggie fried rice. I don't keep cooked rice on hand so I use Minute Brown Rice since it cooks in 1/4 of the time. You could easily add any meat to this recipe, and I do when I have leftover chicken on hand, but usually I just use the veggies that are in my fridge and freezer.

Quick Veggie Fried Rice-Serves 1

The main ingredients-the rest are pantry staples


1 egg
1/2 cup Minute Brown Rice-uncooked
1/4 cup peas
1/4 cup corn
1/2 cup cut up broccoli
3 mushrooms sliced
1 T diced onion
garlic powder to taste or 1 garlic clove mined
1/8 t ground ginger
1/4 t pepper
1/2 t olive oil
1 T soy sauce
1/2 T butter


Directions

1. Cook rice according to package directions.
2. Meanwhile, scramble your egg and dice into small pieces once it's cooked. Set aside
3. Take this time to slice your mushrooms, dice onions, mince garlic, and cut up broccoli.
4. Once your rice is cooked, heat oil in a large skillet over medium/high heat.
5. Sauté onions and garlic (if using fresh) for 2 minutes
6. Add rice and veggies and stir.
7. Add soy sauce, garlic powder (if using), pepper, butter and sauté about 5-10 minutes.
8. Add in scrambled eggs and heat through.


So yummy! And yes, I was out of frozen corn-very weird for me.

This is a quick lunch or dinner. I made it today for lunch and it took about 20 minutes to make. I made a triple batch since my twins saw the rice box and asked for rice for lunch. And don't worry, my kids pick out the mushrooms-they're not that adventurous!

I asked my daughter what she thought of lunch and she said "it was yummy, better than hot dogs!" I'm not going to lie; I'm really excited that my healthy homemade lunch tastes better than a hot dog. I know there are many 3 year old boys and girls that would disagree with that statement.

Yes this is a very messy lunch! Look at all that rice-the floor was worse!

If you like white rice, the Minute Rice cooks up in just five minutes. I know from experience that it cooks up fluffy and tastes great. The Minute Brown Rice that we use now cooks in just 10 minutes! I love how fast it cooks and that it has a wonderful flavor. I cannot taste a difference between the Minute Brown rice and traditional brown rice.
