Artisan Granolas Cheesecake with Alpina Greek Yogurt Recipe

Just about everyone I meet thinks I'm crazy since I don't like cheesecake. My husband, who absolutely loves cheesecake, likes the fact that I don't like cheesecake since that means there is more for him! And the reason why I don't like cheesecake is that I don't like cream cheese. This is why I wanted to try to make a cheesecake without any cream cheese. Smiley360 hired me to try out Alpina Greek Yogurt and make their Alpina Greek Yogurt with Artisan Granolas Cheesecake. I received free product in exchange for my review.

One thing that I like about this recipe is that I keep all these ingredients on hand. Greek yogurt is a staple in my house so we always have it in the fridge. This cheesecake was easy to make and it was in the oven in about 15 minutes. I love having a recipe that doesn't require a special trip to the store and that I can throw together during naptime. 

I used the strawberry Alpina Greek Yogurt to make my dessert. I do not have any pictures of it to share with you though. While it was chilling in the fridge, a mischievous set of twins decided to sample the cheesecake. And by sample it, I do mean attack it like a 1 year old eats their first birthday cake. There was one little corner left that wasn't damaged that my husband got to eat. He said that he liked it and that I should make it again. I didn't try it since most of it was destroyed by my twins.

My daughter prefers the kind without granola for her school lunches.

There are several recipes on Alpina's website to incorporate Greek yogurt into your diet. I add it to my breakfast smoothies to get more protein in the morning. My daughter likes to have Greek yogurt instead of a sandwich occasionally for lunch. I love when she asks for yogurt or lunch since it's so easy to make! Artisan Granolas Cheesecake with Alpina Greek Yogurt Recipe 

Pie Filling Ingredients
4 Alpina Greek Yogurts (pick one of the following flavors: Mango, Peach, Blueberry, Strawberry or Plain. Equal to 2 cups)
½ cup sugar
Pinch of salt
2 eggs
1 tablespoon of cornstarch
2 teaspoon of vanilla extract (optional – recommended if using Plain Greek Yogurt with Superfoods granola blend)
Pie Crust Ingredients

4 Artisan Granola domes (taken off yogurt package)
1/3 cup of nuts (I used almonds)
½ tablespoon of sugar
1 tablespoon of butter (optional, I used)
  1. Preheat oven to 350 °F
  2. In a food processor combine the granolas, nuts and sugar.
  3. Finely chop. Add butter, if desired, and mix evenly throughout the chopped mixture.
  4. Place into the 10” pie pan and create an even layer on the bottom of the pan. Set aside.
  5. In a blender, combine the yogurt, eggs, salt and sugar (add vanilla if you are using Plain). Blend until smooth. Add cornstarch to mixture and blend again. Pour filling into crust in pie pan.
  6. Bake for 35 minutes.
  7. Let cool then chill in the refrigerator for 2-3 hours before serving.
  8. Once cheesecake is cooled, garnish with fruit if desired.
