Garlic Olive Oil Pasta Recipe with Pompeian

Olive oil is a pantry staple in my home. I'm pretty sure I use it every day in my cooking. This is why I agreed to review Pompeian Extra Virgin Olive Oil as part of a Smiley360.com blogger program. I received a sample of the oil and a gift card to purchase groceries to facilitate my review, but all opinions are mine.

I use olive oil to saute veggies and meat, make marinades, and add fat and flavor to my dishes. I've choose olive oil over other fat sources since it's better for heart health. Getting good fat into my son's diet is a constant struggle for me. He has Cerebral Palsy and burns calories and fat very fast! He slides on and off the weight chart throughout the year and his doctors are constantly telling me to add more fat to his diet. I wish they could see the kid eat, he never stops and eats as much as my husband most days.

One of my kids' favorite lunch and side dish is garlic olive oil pasta. This is a dish that my mom made all the time when I was growing up. Usually it was a side dish when she needed something quick and easy. Now that I'm a mom I see the appeal of garlic olive oil pasta. It's fast, easy, and really cheap to make. The only key to the taste is using high quality extra virgin olive oil. I learned the hard way in college that poor quality olive oil will make this simple dish taste terrible!



Ingredients

8 oz pasta
1 1/2 T Pompeian Olive Oil
2 cloves garlic
red pepper flakes to taste
salt to taste
Parmesan cheese - optional

Directions
1. Cook the pasta according to package directions.
2. Meanwhile mince the garlic.
3. Heat the olive oil over med-low heat with the garlic and seasonings. Watch the garlic so it doesn't burn.
4. Drain pasta and return to the pot. (No need to dirty another dish!)
5. Add the olive oil mixture and toss. Top with Parmesan Cheese-optional.

I love that this dish comes together in the time it takes to boil noodles. My oldest likes me to make this for her lunches at school. I make it ahead of time and heat it up in the morning and throw it in a thermos. It's still warm come lunch time and it breaks up the monotony of eating sandwiches.
