Foil Packet Grilled Meatballs

We are having a hot and humid summer here, the first one since we've moved here. Normally I don't want to cook indoors in the summer but this year it's even worse. Last summer my husband and I did a 30 day grilling challenge and it was fun learning to adapt our recipes for the grill. With this hot summer it was time to try to adapt more recipes.

One of my favorite meals is throwing some frozen meatballs in the Crock Pot withe some BBQ sauce and serve it over rice. Easy and all my kids eat it which is why it's one of my favorite meals. But using the Crock Pot takes time I didn't have a few weeks ago so I decided to grill them.

These meatballs were really easy and were on the table in 30 minutes. You can eat them alone or over rice. I have a rice steamer that cooks the rice in 20 minutes without any effort from me so I always serve them over rice.

Grilled Meatballs 

20oz bag of Homestyle Meatballs
2 large squares of aluminum foil
BBQ sauce of your choice
2 cups cooked rice-optional

1. Preheat grill over medium/low heat. Tear off two large pieces of aluminum foil. Place half the meatballs on each piece of foil and top with BBQ sauce. I didn't measure, just eyeball it, then wrap into a pocket securely.

2. Grill the foil packets for 25 minutes, turning occasionally.

3. Remove from the grill and serve over rice.

I was feeling really lazy and didn't want to do dishes this night.

I made these with some grilled broccoli which is the best way to eat broccoli in my opinion. All you need to do is toss some olive oil and salt and pepper over the broccoli and grill for about 10 minutes. I like my broccoli crunchy so you might need to cook yours longer.
